When we are grilling them wrapped in bacon and skewered with a toothpick, I like to have them filleted off the breast bone, it makes a nifty wrapped morsel. Whereas, when I am doing them in the oven I ususally place the whole breast, keel up, in a 9x9 pan and lay bacon strips over the top.

Julie, do you actually make a true fillet and separate the meat from the breast bone prior to cooking?
